Hilsa Bhuna is a rich, flavorful Bengali dish made with hilsa (ilish) fish. To prepare, marinate hilsa pieces with turmeric and salt. In mustard oil, sauté chopped onions, green chilies, garlic, and ginger until golden. Add turmeric, red chili powder, and salt. Cook the spices well, then gently add the fish. Simmer on low heat until oil separates and the fish is fully cooked. Garnish with fresh green chilies. Serve hot with plain rice for a traditional Bengali delight bursting with aroma and taste.
